Well, my mother e-mailed me a recipe today for an easy crockpot version
of macaroni and cheese. So excited was I to employ the magic of the
crockpot, that I immediately threw the ingredients together for dinner.
I also, however, made a few changes to the recipe considering that we
did not quite have everything on hand. Below is the altered recipe (not
dinner time yet, but I’ve tasted the concoction and it’s really not bad
):

Easy Crock-Pot
Macaroni and Cheese

 8 oz cooked elbow macaroni (I used about 6 oz of actual
macaroni and then supplemented the other 2 oz with Ramen noodles–they really are useful!)

1 ¾ C milk (preferably whole milk–the original recipe called for 13oz of evaporated milk)

3 C sharp cheddar cheese – shredded (set aside some to
sprinkle on top)

¼ C grated Parmesan cheese (the kind you put on spaghetti or
pizza)

3 T butter

1 t onion salt

1 ½ t salt


Combine ingredients in crock pot. Sprinkle reserved cheese
on top of mixture. Cook on low for 3-4 hours.

 Serves 4

Watched Kingdom of Heaven tonight. Not a bad movie, overall. I really
like the soundtrack and Orlando seems to earn his place among the
non-Elven actors of the world. Poor Frodo will always struggle (. .
.tangential reference, if you don’t catch it, no worries).

No Constitution tomorrow, which will be infinitely nice. Still can’t
sleep in because of Buddy Reading but that’s always fun anyway. I’ve
also been trying to figure out my schedule for next semester and its
always one of the most bloody difficult things. Usually because of my
Latin–when you only have one choice of classes because you can’t go
any higher, you’re really pretty limited when it comes to everything
else as well. But I’ll figure it out…somehow…hopefully by
convincing Dr. Jones that my schedule is more important that everyone
else’s and it’s essential for me to take Italian AND Latin AND Art
History before Cortona. Because I have to think of that too….next
fall. Eep.

But now it really is time for bed. Night.

Why does it seem like I can suddenly relate to the move Lady and the
Tramp more than ever before . . . ? I love watching movies from my
childhood that I haven’t seen in a long time, especially Disney movies.
The funny part is how different the movies are when watched with a more
“grown-up” mind. Like the Rats of NIMH…it took me a while to realize
that was the National Institute for Mental Health and not some made-up
name like Narnia. Anyway, I’m slaving away at a Constitution paper/exam
that is simply this:

“Based on the assigned readings through September 28, write an essay on
the role of reason in the American regime as designed by the founders.”

6 pages, double spaced

You’d think that 6 pages on such a vague/general topic wouldn’t be too
hard, but it is extremely difficult. I’m at three pages and I honestly
can’t think of another word to say. This is going to be a long night.

Fall has been slow in coming this year in the ‘dale. The leaves have
yet to turn–they are mostly still green–and it’s almost as though
they are as reluctant as the rest of us to leave behind the lazy days
of summer. But here it is…finally an appropriately chilly day and all
I want to do is be busy. That is a nice (and rare) feeling, so I figure
I should take advantage of it. 🙂 I’ve got a Constitution paper due on
Monday, a poem recitation on Tuesday and a Somerville paper in another
couple weeks. That is the one that will be the thorn in my side–the
agony and the ecstacy–for a while. But this one’s gonna be at least a
B, if not an A. So there. And off I go to work on my masterpiece.

Adventures, indeed.

Sorry my updates have been scant and scattered. The business is steady,
which means that my brain is usually trying to be five places at once
and ends up in none at all. Friday night was the SAI Charity Ball and
that was lots of fun. Picture below of me and Patrick

Saturday night was the Sigma Chi White Trash Bash. It started out
pretty slow…Karen and I went just to hang out for a while and were
slightly bemused by the many freshman running around scantily clothed
and the frat boys wearing incredibly short cut-offs with wife beaters
because apparently that is what white trash wears. I only caught sight
of one baby doll being carried around though, which is probably much
truer than the gal who was carrying it even realized. After a while it
was more fun, but I ended up heading out around 1:00.

Sunday was regular church with Patrick accompanying again then
cheap (yummy) Chinese, lots of napping, and a tiny bit of Latin.
Overall, a pretty good weekend, wouldn’t you say?
