Things That Make Winter Bearable…

     A CHICAGO WINTER is not so different from a Michigan winter, but both are very different from a Georgia winter. Growing up with hopes for a mite of snow (flurries, even) around Christmas time is a far cry from braving the buckets of white mush that the heavens dump over these northerly regions this time of year. Not that I’m complaining. Too much.
     After four years of snow and ice in rural Michigan, you’d think Chicago wouldn’t be so bad with its paved sidewalks, regular snowplowing and salting….but you’d be wrong. The sidewalks may not be covered in feet of snow, but they are slicked over with sheets of ice. Where there’s no ice, there’s puddles of slush and mud deep enough to drown in…or at least to get your best jeans wet up to the knees. And rue the day you step a little too close to the curb, only to catch a wave of chilly side-spray from a speeding taxi. So, living in the city in winter time is not all sugar plums and bonbons (not that I ever thought it would be), but here is a list of the few things that will keep me going through the next six months of this gray winter “wonderland”…..

So it looks like most of the things I need to get me throw winter are hot beverages. Does a body good!

Diet = Fun

Who knew diet food could be so tasty?

Despite some less-than-approving comments from various folks (you know who you are…), I am on a diet. Not because I want to lose gobs of weight (although a little less belly fat wouldn’t hurt), but because I want to re-acclimate myself to a healthy eating regimen–something of which I have lost track since getting married. The regimen I have chosen to help me do so is dubbed the Cheat to Lose diet. I picked up the book at my in-laws house (who wouldn’t be curious with a title like that?) and it now sits at my bedside for daily references. The basis of the diet is rooted in the hormone leptin, basically the body’s fat intake and metabolism regulator. The three intro weeks of the diet are the toughest–1 week low-carb, 1 week low GI (glycemic index) and 1 week higher GI–but after completing seven days, I am already feeling a little lighter. I think this may be more mental than anything, however, simply because I have altered what I’m putting into my body. Nonetheless, it makes sense to me that eating a sensible, non-starvation diet with high fiber and high protein foods (which are more filling, thus lead to less caloric intake) would ultimately lead to fat loss. If nothing else, it is helping me to be more careful about what I pop into my mouth.

The best part of the diet is the whole “cheat” part: after the initial priming phases (re-training your body to recognize and regulate leptin levels), you are allowed a cheat day every 7th day. McDonald’s French Fries? Yup. Chocolate Cake? Sure. Giant Chipotle Steak Burrito? Have at it! The only regulating principle: Don’t stuff yourself. But that’s something always to be kept in mind. Another great part about this diet is the exercise regimen, short and sweet: 18 minutes, three times a week. The trick is intervals, which cause the body to burn fat more efficiently as effort fluctuates between moderate and strenuous exertion. But only 18 minutes at the gym?? I could definitely go for that!

Anyway, the whole point of this post was to share a recipe that I cooked this morning for breakfast that turned out to be DELICIOUS!

Whole Wheat Pancakes with Fruit

Serves 2-4 (8 medium-sized pancakes)

3/4 cup whole wheat flour
2 tsp baking powder
3 T true-to-measure Equal (I used Splenda)
1 egg white
1/2 cup skim milk
Cooking Spray (I used this cool stuff I found at the grocery store called Baker’s Joy–actually has flour in it!)
2 small handfules of mixed berries (I used some of the dried cherries and cranberries that we keep in our cupboard..DH loves them)

In a large bowl, mix the flour, baking powder and sweetener. In a separate bowl, whisk together the egg white and milk, then add to flour along with 1/2 cup of water. Mix just until combined.

Heat a nonstick skillet over medium heat and spray with cooking spray. Spoon pancake batter into the skillet (I used a 1/4 cup measuring cup–perfect size). Cook until bubbles appear on the top and the edges look dry. Flip the pancake and cook until the bottom is golden brown.

I enjoyed my pancakes with a teensy sliver of butter on top of each (no syrup!) and they were fantastic! This recipe could also be used for waffles (can’t wait to use my new Belgian Waffle Maker). Another topping idea that occurred to me…

Instead of mixing in the dried berries, use frozen mixed berries! Sprinkle a little Splenda over 1/2 cup of frozen berries and microwave for about a minute, just until they start thawing and the mixture gets gooey. Spoon over hot pancakes and voila! A healthy version of a your favorite breakfast treat.

It’s a strange thing to get used to: working from home after so many years (well, maybe just months) of envisioning myself as a glamorous “working gal” in the city–sauntering down the sidewalks of Chicago in my 4″ heels, masterfully evading the patches of snow and ice that might otherwise bring me down; arriving at the office in a  rush after stopping briefly for my daily grande-double-shot-skinny-caramel latte to sit gracefully at my desk and await the tasks of the day a la Lauren Conrad of The Hills or Ann Hathaway in Devil Wears Prada….

Granted, this vision was probably a few steps higher than even I expected or hoped for. Just working as an intern in one of the editorial offices in Chicago would assuage this glamorous, albeit false impression, of the work force. Yet, here I sit, in my tiny, 800 sq. ft. apartment, delaying the start of the work day that I once so vividly anticipated. I am not discouraged…yet. I say this because my current position has so much potential for growth and, though perhaps not the proper connections, at least the experience that may launch me into a high-end editorial career. My point is to say that you never know where you may end up. But, Lord-willing, everything has it’s purpose and I wouldn’t be here if it weren’t for a specific reason.

No, working from home is not glamorous. Yes, most of the time I don’t even leave the “office” during the day. But what can I say? It could be worse. 🙂

Well, the holidays are right around the corner and I’m feeling a teensy bit…homesick I guess is the word for it. I have so many wonderful memories of spending Thanksgiving and Christmas with my family in Georgia and I’m feeling both nostalgic for those days but also excited for the new memories that my holidays as a married woman will bring. I would love to be able to re-create, in some form, the memories that I grew up with while making new memories so I’m going to list some of my favorite things about the holidays…

– Waking up to the smell of coffee brewing and breakfast cooking
(this happened more than just on holidays, when my mother would wake up earrrrly to cook food for our potluck supper after church on Sundays)

– Driving to family’s homes in Birmingham, Alabama, on Thanksgiving to visit with aunts, uncles and cousins. This didn’t happen as much once we were in college, but the memories from when I was younger stick with me.

– Singing carols on the way home from Christmas Eve Services at the Episcopal church downtown. This was a more recent happening but it was the best feeling….riding home with my sisters late at night after singing in two Christmas eve church services, and knowing that the next day would be spent celebrating with family and friends.

– Waking up on Christmas morning and being so excited we couldn’t stay in bed….but then having to wait at the top of the stairs until my parents were ready for the mad rush (Daddy with the video camera, Momma with her cup of coffee). 🙂

There are lots of other things, but these are the memories that stand out the most right now. As for new memories…. three years ago on Thanksgiving was the first time I met Patrick’s family (after we had been dating approximately 2 months!). Last year, Christmas Eve, is when he proposed. 🙂

I guess it’s a part of life that memories like these come full circle: you experience them and then you get the chance to make them happen for others. I’m looking forward to the ways in which my childhood memories will influence the holidays of the future!

P.S. One more thing: Christmas music listening doesn’t start till AFTER Thanksgiving!

Halloween/Reformation Day Weekend

Highlights from the weekend:

– Packing up the Trail Blazer (with the help of random Russian guy) and having an adventure driving downtown with  Chelsea!

– Dressing up as Snow White and going out with Chelsea and Stacy for Halloween! (photos to come)

– Tailgating before the ND game….and then napping in the car 10 minutes into the game (although the consequences  were not so pleasant)

– Volcano’s Pizza = perfect

– Grocery shopping at THREE (3) different stores. And finally having a stocked pantry.

– Spending the weekend with family and friends 🙂
