It never fails that the kids actually sleep in or I didn’t pick out the right pink dress for Big H to wear on days that we have to be somewhere in the morning. These mornings almost always end up with me grabbing a cup of coffee and no breakfast. Please tell me I’m not the only momma that has this problem!Making some simple breakfasts ahead of time and freezing them has been a huge help and time saver! My hubby loves this quick breakfast to eat while driving to work. I love that the burritos are inexpensive, filling, and are packed full of flavor!
Breakfast Burritos Recipe
BaconScramble your eggs, (I use 1 egg for 2 burritos) and add some salt and pepper for taste.
Chop some peppers and onions.
Sauté the peppers and onions.
Add them to a mixing bowl.
Add bacon or bacon bits and cheese to the mixture and stir.
Spoon the eggs into a flour tortilla and make a burrito.
After you wrap each burrito individually, put them in a plastic bag. Before you put them in the freezer, make sure you label what’s in it. (One morning I was surprised to bite into a homemade bean burrito instead of a breakfast burrito!)
When you are ready to eat your burrito, take it out of the foil and wrap it up in a paper towel and microwave it for about 1 minute.
